It actually depends on which state you live in. Each state has their own laws about titles in this situation. You should just contact your local DMV, there is likely a document she can hand write, have notarized and mail to you for you to use in place of her signature. Additionally, you may want to contact your local Goodwill, and/or High School. If you donate the vehicle, you will be able to use it as a tax write off.

Mail her the title, since she is listed as a co-owner. ( I would suggest you include a self-addressed, stamped envelope, since she will, in effect, be doing you a favor by signing the title). Then you can transfer the title to the junkyard.
Even better than junking it, why don't you donate it to a local charitable organization that accepts non-running cars? You could take a small tax-deduction and help underpriviledged people at the same time!

Simple. Call one of the people offering free scrap car pickup in your local paper or craigslist and tell them you need to dispose of an abandoned vehicle that's been on your property for months. No title, no keys, no wheels, no problem. Some companies will even pay you take the vehicle away.

Call one of the classified ads in your local paper advertising to pay for junk cars and they pick them up. The ads around here are usually up to $250, the highest I've seen lately is up to $300. With metal prices up, these ads have popped up quite a bit around here.
Many charities won't accept a non-running vehicle, but if one near you does, that is another option.
State laws will probably vary, but the last vehicle I had hauled off for junk they just needed the title to it, didn't need it signed and notarized. Charity donation may have to have the title notarized if they're going to resell it or use it as an occupation training tool to fix it then sell it. Just ask about the title whenever you call to inquire about having it hauled off.

it really doesn't matter, they don't sell the car as a whole, so a properly signed title doesn't matter.

It depends on how it is worded on the title. If it says your name and your ex's name, or does it say your name, with your ex's name listed directly below it. If it is the latter, you will need a release of interest from the ex. You do not need to drive there to get it, just call her and tell her the deal. She can write a release of interest, before a notary, and mail the info to you. Be sure she identifies the car by the VIN, make/model/yr, and states that she is releasing all interest in the vehicle. If the car is less than ten yrs old, you also have to disclose mileage, on the back of the title. If the title says and, then your signature alone should be enough to give the title to the junkyard.
